Time: Prep Time 30 mins. Cooking Time 25 mins.
Ingredients (makes a baker’s dozen)
For the cupcakes
- 300g flour
- 1tsp baking powder
- Pinch of salt
- ½ tsp cinnamon
- ¼ tsp allspice
- 50g walnuts, toasted and finely chopped
- 4 eggs
- 160g sugar
- 250ml vegetable oil
- 275g carrots, grated
- 1 orange, zest
For the cream cheese frosting
- 250g cream cheese, cold
- 115g butter, room temperature
- 100g powdered milk
- 250g powdered sugar
- 2 Tbsp double cream or milk
- 1 tsp vanilla extract
Method
- Combine all dry ingredients together (flour, baking powder, salt, cinnamon, allspice, and walnuts).
- Whisk together the eggs and sugar until light in colour.
- Stream in the oil as you whisk (if doing it in a stand mixer with the help of a friend).
- Add in the grated carrot and orange zest.
- Pour in the dry ingredients and mix just until combined and no more dry patches are showing in the batter. The batter will be quite runny.
- Pour in a muffin or cupcake tin and bake for 25 minutes at 180 C.
- While the cupcakes are baking it’s time to make the cream cheese frosting.
- Whip up the butter for 1 to 2 minutes first and then add in the cream cheese and mix for another 1-2 minutes.
- Add in half of the powdered sugar and the milk powder.
- Pour in the double cream and let it incorporate.
- Add in the remaining powdered sugar and milk powder and the cream cheese frosting is done.
- Once the cupcakes are baked, take them out and leave to cool before decorating with the frosting.
